It all starts with The Groundworks.


We are incredibly lucky where we live to have amazing places to eat. The only issue is there are so many to choose from! Hitchin is slowly beginning to change its ways, at one time it was definitely overcrowded with lots of chains. Now however more and more independent restaurants and coffee shops are popping up.


When you're starting your own business every detail counts, especially when your working with food! Lucky for us we have amazing people locally who can help us with our vision of making amazing food! Whether it be Fabio's Gelato in local restaurants or local bakers supplying amazing bakes to some of your favourite coffee spots! 


Owning your own business makes you really appreciate when other people and business owners support your dream! We always try and show us much support as we can; whether that be sourcing local ingredients or going out to enjoy some incredible food at one of the amazing restaurants we live near. Just remember that when you buy from a small local business you are making someone very happy, trust me when I say that it every sale is personal.  


That is one of the reasons I started doing interviews for our Blog. Many of us visit these places and they become family favourites and I (mainly because I'm crazy nosey) have always wandered what inspired people. 


This week we had the opportunity to interview Ben from the Groundworks! Now The Groundworks is one of our fave places in Hitchin. It's always our go to Brunch spot on a Sunday! I mean look at those Pancakes?? Wouldn't this be your go to spot as well?! 


They also put on weekly late Cocktail Nights and Special Events that are definitely worth a visit. Find them this weekend at the Hitchin Wine and Food Festival (we will be there to!) If you know Hitchin well then you will definitely have heard of The Hart. A well known old school pub in the centre of town, mainly known for its cheap booze. Sadly for some it closed down over a year ago. However luckily for all of us the amazing team behind The Groundworks will be bringing us a new Pub and Restaurant in 2018. Follow there insta for updates @kiteredhart I know that we are super excited for this to open! 



Anyway as per usual I have ranted on before you have even had the chance to look at the interview! Have a read below and let us know what you think! 

What made you start your own business? 

A desire to be free from all the politics I had experienced in my previous job in contract catering and wanting to create something unique in Hitchin. When we first started out, businesses such as Honest Burger and Pizza Pilgrims played a huge role in inspiring Tom and myself. Being only a couple of years older than us, we realised that starting up our own venture was a viable option.


What was your first I made it moment?

When we were featured in Courier magazine, which is a big lifestyle publication, that gets handed out to over 60,000 readers. Tom and I were even recognised in some of our favourite London coffee shops!


What is the toughest part of your job?

Managing the stress levels and learning to switch off. There’s always something on the go, and if there isn’t you know something is about to crop up.




What is your most memorable food experience?

Copenhagen, hands down. The food pairings I experienced when I was over there were out of this world. I would recommend a trip to a restaurant called Relae where the chefs are also your servers for the evening. The workflow was unlike anything I’ve ever seen.


Name one food you couldn’t live without?



What is your most memorable travel experience?

In year 11 I went on a months expedition to Peru. We ate piranha, climbed a mountain and experienced an earthquake.


Where is your go to place for inspiration?

London town! The food scene in London is incredible and every time I’m up there I discover something new.


Name one thing you couldn’t live without?

That’s an easy one, food.
