When all else fails .... Cheese

Winter is here. I hate the Cold. Enough Said.

Sometimes there is only one thing that makes winter bearable and that is good old comfort food; and really what better comfort food than cheese?! Gooey Cheese, Pancetta and Warm Bread that's what! This is the ultimate treat, even better it looks super fancy but is super easy!

Ultimate Camembert Recipe Serves 2

For the Camembert

1 Whole Camembert

6 Slices of Cooked Pancetta Sliced

Pinch of Paprika

Sprinkle of Rosemary

Pinch of Chilli Flakes

Crushed Walnuts

Drizzle of Honey

Drizzle of Mrs Middleton's Garlic Rapeseed Oil

To Serve

1 Ciabatta Loaf

Red Onion Chutney

  1. Preheat your oven to 200 degrees. Take your Cheese out of the wrapper and remove the little checked red cloth (if there is one). Keep it in its wrapper and place it in either a Cheese Baker if you have one, or back into the case it came in.

  2. Take the top layer of paper off the top of the camembert. Start by sprinkling all herbs and spices over the top of the cheese, then add the walnuts, honey and Garlic Oil.

  3. Place both the bread and the cheese into the oven and bake for 10-12 minutes depending on how gooey you like the cheese. The longer the gooier!

  4. Add the Pancetta to the top of your baked cheese. Add everything else to your serving board.

  5. Eat. Enjoy and revel in the cheesy gooeyness!

See didn't I tell you it was easy?

What made you start your own business?

We have always done farm walks here at Barton Hill Farm, to show people what we do and why. We were surprised that so many people didn’t know where their food came from, so decided to do something about it. This is one of the reasons why each of our bottles of rapeseed oil has the field name and grid reference on it, to show people exactly where the seed came from to make that oil.

What was your first I made it moment?

When we entered our natural rapeseed oil into the Great Taste Awards, not long after we launched our new business, only to find we won an award! We have since won some every year.

What is the toughest part of your job?

Fitting everything in around the farm work and the children. Every day is totally different and the children enjoy being involved in my work life. They come out and about on the farm with me as well as help do deliveries of oil and sell products at food fairs and farmers markets. I love having them with me and they have learnt a lot from meeting chefs and customers.

Eating my grandmother’s roast potatoes. They were the best I’ve ever had!

What a tricky question – it might have to be the good old spud; healthy and versatile.

What is your most memorable travel experience?

I have been to Japan three times and the food and drink there is incredible. A highlight was eating breakfast at 5am in a tiny sushi bar at the Tsukiji Fish Market in Tokyo. I’ve never seen anything like it nor tasted such amazingly fresh fish.

Where is your go to place for inspiration?

Recipe books – I could read them for hours.

Name one thing you couldn’t live without?

That first cup of tea in the morning – without it I can’t function!
