This week we got the chance to interview the lovely Louisa from Tuck In. Another local Street Food Company that creates delicious and addictive food right in front of you. From personal experience there Shawarma and Sweet Potato Fries are sensational. They offer a bespoke service using only the Finest Ingredients. Like us they have the luxury of being mobile, meaning that they don't have to merely stay in Hitchin they can go and create their culinary magic wherever people need them. I love finding out the backgrounds of my peers, it is always nice to find out what inspires other people and what their motivations are. 

 

 

What made you start your own business?

I worked away on private yachts for 7 years. When I left my position I decided that I wanted to be my own boss and not be tied to one place.
What was your first I made it moment?

Serving my first ever customer from our trailer.
What is the toughest part of your job?

For me, it is very physically challenging- heavy lifting, and general trailer logistics!
What is your most memorable food experience?

I’ve been fortunate enough to eat in some of the worlds best restaurants and each come with your own unique experiences. My favourite restaurant to eat at is a place in Barcelona called Canete. It’s a theatrical meal with amazing service, food and cava.

 

Name one food you couldn’t live without?

This is a real tough one…. The one ingredient I couldn’t live without is sea salt.
What is your most memorable travel experience?

This is another tough one as I have been lucky enough to travel with my previous job. I suppose the most memorable as to be travelling over the top of Arctic Canada. It was a once in a lifetime trip and something a lot of people will never be lucky enough to see in their life.
Where is your go to place for inspiration?

I love to read cookery books but I find just talking to other chefs really inspires my food. I think it’s invaluable being able to bounce ideas off each other.
Name one thing you couldn’t live without?
