Gin and Tonic Loaf Cake and Cupcake Recipes.

 When you love Gin you don't just want to drink it. You want to eat it as well. 

 

Last week I had the chance to  combine two of my favourite things Gin and Cake, and it was all for the sake of work! We sold these cupcakes alongside our amazing Pizzas at The White Hart's Gin Festival. 

 

I find that loaf Cakes are the easiest types of Cakes to Bake. You aren't expected to go crazy with the decoration and 9 times out of 10 a Drizzle of some sort is involved. Which can hide a wide range of sins including slightly over baking. You also get to create a whole new flavour experience once you have added the drizzle. Trust me as a Gin Lover this cake is a dream, even if your not a huge fan if you use a more smooth an delicate Gin (think Bombay or Hendricks) then you will even get the on the fencers changing their minds.

 

G&T Loaf Cake Recipe 

Ingredients 

 

 For the Cake

250g Unsalted Butter

250g Caster Sugar

Zest of 1 Lime

4 Large Eggs

250g Self Raising Flour

1 Tspn Baking Powder

1 Pinch Salt 

50ml of your favourite Gin 

 

For the Drizzle 

125ml Tonic Water (I use Fever Tree) 

125g Caster Sugar 

Juice of 1 Lime 

50ml Gin (optional)

 

For the Icing 

100g Icing Sugar 

Juice of 1 Lime

Splash of Gin (optional) 

Sliced Lime for Decoration 

 

 

Recipe

  1.  Pre heat your oven to 180 degrees. Start by creaming together the butter and sugar until it is light and fluffy. Once the butter is creamed then stir in the zest of the lime.

  2. Gently whisk the eggs in a separate bowl and then add to the butter and sugar mix.Add a handful of flour to the butter, sugar and egg mix (this stops the mixture from curdling) Whisk the Mixture until it is fully combined and airy. 

  3. Sieve the flour, baking powder into the mixture and stir until combined. Then add the Gin and pinch of salt and stir until combined. Add your mixture to the loaf tin and put in the oven, bake for around 45mins or until the cake is golden and cooked through. 

  4. Whilst the cake is baking make the Syrup for the cake add all of the ingredients to a saucepan over a low-medium heat. Keep stirring the syrup until the sugar has fully dissolved. Once dissolved remove from the heat and leave to cool. 

  5. Once cooked remove from the oven and place on a cooling rack. Leave to cool for around 10 minutes; then poke holes 3/4 way through the cake. Then pour the syrup over the cake, towards the end of the syrup you may have to brush the syrup on so you don't waste too much! 

  6. Leave the cake to completely cool then combine the ingredients for the icing. The icing needs to be a thick but still a pourable consistency. Pour/drizzle the icing over the loaf cake and then place the limes prettily on top of the loaf. 

G&T Cupcake Recipe

 

Ingredients

 

For the Cupcake Batter

250g Unsalted Butter

250g Caster Sugar

Zest of 1 Lime

4 Large Eggs

250g Self Raising Flour

1 Tspn Baking Powder

1 Pinch Salt 

50ml of your favourite Gin 

For the Drizzle (optional)

125ml Tonic Water (I use Fever Tree) 

125g Caster Sugar 

Juice of 1 Lime 

50ml Gin (optional)

For the Icing 

300g icing sugar , sifted

50g unsalted butter , at room temperature
100g cream cheese, cold
Splash of Gin
Squeeze of Lime Juice

 

Instructions 

  1. Follow instructions 1 to 5 in the G&T Loaf Cake Recipe 

  2. When adding the drizzle only add a tiny amount for each cupcake, make sure you gently poke holes into the cake and do not go through the paper case. 

  3. Beat the icing sugar and butter together in a freestanding electric mixer with a paddle attachment (or use a handheld electric whisk) on medium-slow speed until the mixture comes together and is well mixed.

  4. Add the cream cheese, Gin and Lime Juice. in one go and beat until it is completely incorporated. Turn the mixer up to medium-high speed.

  5. Continue beating until the frosting is light and fluffy, at least 5 minutes. (Do not overbeat, as it can quickly become runny)

  6.  

    Pipe onto your Cupcakes and add a slice of lime for decoration. I also cut down some green and white paper straws that I have for an extra touch.
